Ingredients:
- 1 cup red lentils
- 1 onion (chopped)
- 1 carrot (chopped)
- 3 tbsp LO’s EVOO
- 1 tsp cumin
- 1 tsp paprika
- 4 cups water or broth
- Salt & pepper to taste
Instructions:
- Sauté onion and carrot in LO’s EVOO.
- Add lentils, water, and spices; simmer for 20 minutes.
- Blend until smooth and serve with a drizzle of olive oil.
