Mercimek Çorbası (Turkish Lentil Soup)

Lentil Soup with LO's EVOO

Ingredients:

  • 1 cup red lentils
  • 1 onion (chopped)
  • 1 carrot (chopped)
  • 3 tbsp LO’s EVOO
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 cups water or broth
  • Salt & pepper to taste

Instructions:

  1. Sauté onion and carrot in LO’s EVOO.
  2. Add lentils, water, and spices; simmer for 20 minutes.
  3. Blend until smooth and serve with a drizzle of olive oil.
